We were sitting at a restaurant over the water in West End on a cruise stop when we decided we were coming back. Not as cruise passengers. On our own terms. Research started that day.

The next morning Jessy arrived with breakfast before our tour even started. Then she spent the full day showing us the island.

Our first stop was Gumbalimba Park on the western end of the island. Jessy took us on a guided tour through the whole property — the animals, the tropical gardens, the coastal setting. Monkeys and parrots moving through the trees above you. The kind of place that reminds you how different the natural world looks in the tropics.

Roatan Rum Company

Next was the Roatan Rum Company. We toured the distillery and ended up in the gift shop longer than planned.

We found Mango Madness Tropical Pepper Sauce. Mango and scotch bonnet peppers. Not too spicy — the flavor is fruity and extraordinary and unlike anything we had tasted. We bought a bottle. We put it on everything for the rest of the trip in Utila. It did not make it home. We ran out a day or two before we left.

We still think about it.

The Ferry to Utila

The ferry to Utila runs once a day. Jessy dropped us at the terminal in the afternoon in time for the crossing. We had already told her at the start of the trip exactly when we would be back — nine days later on the return ferry.

Nine days later she was waiting at the dock exactly as planned.

She drove us back to the airport. We flew home. We have already talked about going back.
